Pokeweed (" Phytolacca americana") supplies a green vegetable that is popular the southern U. S. even though it has several poisonous parts. The young shoots are the only green that can be eaten; they should NEVER be consumed raw.

  • Wonderful video. I haven't had Poke Sallet since I was a child. Blanche, you have inspired me to cook some for my children and grand-children. I enjoy passing on folkways to my kids. And they are normally pretty good sports when it comes to trying my latest dish. Now all I have to do is wait till May.

    Thanks for your encouragement!

My 2 sons seemed to like wild vegetables better than ones from the store; however my grandchildren are a little pickier-- but I'll keep trying to expand their culinary repertoire!

  • Just make sure to cook the young poke shoots in 2 waters and NEVER eat them raw!--B
