How do we define grass-fed? The cattle are on pasture right up until they are processed. They are not in feed lots eating silage. Most cattle in the United States are "finished" or fattened on grain, a diet that reduces the level of beneficial Omega 3 and conjugated linoleic acids (CLA) in their fat. The beef get fattened up while on their finishing diet and, increasingly, their fatty tissues are filled with Omega 6 fatty acids, making them a less healthy option. Our cattle never eat grain and so the beef tends to be leaner with a higher proportion of healthy fats. We do not process animals in the winter or early spring, when they are only eating dry grass. Our animals are eating green grass right up to the time of processing, and are dry aged before packaging. Dry aging is an extra step to take to ensure that our beef is tender.
Many sources of grass-fed beef today are simply from cows in feedlots eating silage year round. Silage is cut grass and is even green but does not give the cattle the beneficial fats that come with eating green grass. If you buy grassfed beef be sure to confirm that the cattle are eating pasture grasses and not silage (cut grasses).
The Galloway cattle are perfect cattle for grass fed beef operations because they are such proficient foragers on pasture. In fact, these cattle thrive on pasture grasses and forages when other cattle breeds would not.
