i have personally been to this restaurant in madrid. the suckling pig is one the best that i ever had in my life!

My Uncle Jim-Bob uses that same method down in Montezuma GA!!!!! Nothing New!

You are one fine chef,would have loved to of met you when myself and my wife came to Madrid and visited the restaurant a few years ago.We ate downstairs in the cellar and the atmosphere and food was amazing.Also a band came down and entetained everyone for a while.Anyway thanks for the memories and hope to leave rainy England very soon to eat at your fine restaurant,All the best and Cheers!

This filipino guy I know once taught me how to roast a medium sized pig using bamboo pole on open fire. Took me nearly 7hrs turning and turning but it was good. The ears are the best parts.
But the best sucking pig I've ever had is in a little known thai chinese restaurant in bangkok. After they roast the pig, the skin is sooooo crispy you can't find any layer of fat on it. Best.
Thats how skilled the cook there is.
