From KETC, LIVING ST. LOUIS Producer Jim Kirchherr visits the Square One Brewery to explore a long-standing St. Louis tradition: Beer making. Kirchherr delves into the history of beer brewing in St. Louis, which really took root with the arrival of German immigrants who brought their tools and know-how, and made St. Louis a brewing city. One advantage St. Louis had over many other cities was the number of caves it had for storing and keeping beer cold. Before prohibition St. Louis had more than a dozen major breweries, but in the end on Anheuser-Busch survived. Now however, a wave of smaller (or micro) breweries have sprung up around the city, including Square One, where Kirchherr learns that beer making is part science, part taste, but always about keeping things clean.
