【材料】:嫩母雞腿2隻、生抽一罐、老抽半碗、冰糖一碗半、月桂葉適量、八角5粒、甘草適量、草果四粒、桂皮適量、沙薑適量、老薑1塊(約15g)、青蔥3支(約25g)­、紹興酒4大匙、洋蔥一個、白芝麻少許、香油一大匙
【做法】:
1、把生抽、老抽、冰糖、月桂葉、八角、甘草、草果、桂皮、沙薑、放入深鍋中,以中小火煮滾成「油雞水」。
2、把雞腿近骨頭處用刀劃開後,放入煮滾的油雞水中煮15分鐘,再加入紹興酒後浸泡5-10分鐘。
3、蔥白頭切絲,沾上香油、刷在煮好的雞腿上放涼,再把雞腿切塊。
4、取半碗的油雞水,加入半碗水,再加入洋蔥丁炒香,放入蛋液煮至8分鐘後熄火倒在白飯上。
5、再撒上蔥花、以及切好的雞腿,最後再撒上白芝麻即完成「港式油雞」。
