Brioche is a wonderfully enriched bread that is very soft and moist, children love it!! Brioche is enriched with eggs and butter and the amount of butter determines if it is "rich man's, middle man or poor man's brioche" butter mm mmmm!

  • I haven't tried this recipe yet, but I'm going to today. Glad for your example of showing how you can pull the dough between your hands to a see-through "window." I'm going to use this same dough (perhaps with a bit more sugar) to try to make what the Bavarians call "Fensterkuechel." Fensterkuechel basically means "window doughnut." A round doughnut is formed with the "window" in the middle and fried in deep fat and served warm with powdered sugar on top! Your dough should be perfect for it.

  • An egg wash spread over the top of each would yield a much nicer baked color.
