I made the seitan yesterday, and it turned out great. I had to sub some barbecue sauce for the worchestershire sauce/liquid smoke because these are pretty hard to find in small-town Norway. I also didn't have any chickpea flour (for previously stated reasons) so I mashed up some cooked chickpeas and blended it in with the dry ingredients. I don't know how the consistency should be, but I think it made the seitan less "spongy".

@PeonMoron Seitan is created when the gluten from flour or the vital wheat gluten binds together. I looked into it but I really don't think you can.
