How do you butterfly the trout and remove backbone with a spoon?

This fish did not seem to have a backbone or did you magically remove it so we could not see it.

I just bought a fresh trout and opened it to my surprise there's a head, fins, tail and all! I don't buy fish fresh like that (first time actually) and I went "shit, what do I do with this?" Thanks for the lovely video. You've helped me enormously! I'm cutting the head off immediately! That thing is freaky, those eyes, but hey it's good eating tonight!
