I have been in the restaurant and catering business for 25 years as a cook and chef, in the nineties I became interested in fitness and weight training which led to my interest in healthier food and cooking techniques.

  • How do you butterfly the trout and remove backbone with a spoon?

  • I cant do it with a spoon but check out my new video,butterflying a fish its on the gilbertboyd channel

  • This fish did not seem to have a backbone or did you magically remove it so we could not see it.

  • I just bought a fresh trout and opened it to my surprise there's a head, fins, tail and all! I don't buy fish fresh like that (first time actually) and I went "shit, what do I do with this?" Thanks for the lovely video. You've helped me enormously! I'm cutting the head off immediately! That thing is freaky, those eyes, but hey it's good eating tonight!
