Whiskey Chicken
For 2 servings, here are the ingredients youll need:
4 Boneless/skinless chicken thighs
Salt & pepper
About 3 tablespoons olive oil or enough to coat the bottom of your pan
1 cup of thinly-sliced mushrooms; I prefer to use baby Portobello mushrooms for this dish
1Tablespoon of shallots
1 Tablespoon of dried Tarragon (if youre using fresh youll need about ½ Tablespoon)
8oz Whiskey
1 cup heavy cream

Pour olive oil in pan and turn to high heat
Season the boneless/skinless chicken thighs with salt & pepper
When the oil is hot, sauté the chicken over med-high heat until 90% cooked. . .8-10min
Add the sliced mushrooms & sauté for another 2-3 min
Add the shallots
Add Tarragon
Add Whiskey and reduce over med-high heat until syrup consistency, about 2 min
Add the heavy cream and reduce to a nape consistency, or one that coats the back of a spoon
Transfer to a plate & garnish with chopped Italian flat leaf parsley
