Coffee grounds go in the green column. Its not the color, its the nitrogen content. The presentation is poor here. Anyone serious about composting should look elsewhere for information on starting a compost heap.

Newspappers? Doesn't look trusty. We dont know what the ink was used. It usualy contains the lead (Pb).

There are some unknowns here, that's for sure. Moisture is relative... you don't need to water compost like a plant- but it does need to have the "wrung out sponge" moisture level. We don't know if she's adding this to a bin out back, or if this 5 gallon bucket is the end of her effort.
To avoid your worries about odor, just add more browns than she recommended... a 3:1 ratio is more like it.
