Yields: 4 to 6 servings

Ingredients:
2 tbsp. olive oil
1 onion, chopped
3 tsp. minced garlic
1 chilpotle pepper in adobo sauce, chopped
1 cup raisins
2 (14.5 oz) cans chopped tomatoes
3 tbsp. creamy peanut butter
2 cups chicken broth
2 tsp. chili powder
½ tsp. cinnamon
1 tsp. salt
1 tsp. pepper
1 ½ oz. unsweetened chocolate
1 rotisserie chicken, meat removed and shredded
Flour tortillas for serving


Preparation Directions:
~ Heat oil in a large pot add onions and garlic, cook until onions are soft. Add chipotle pepper, raisins, and tomatoes, stirring to combine. Bring to a boil and simmer for 10 minutes. Add peanut butter, chicken broth, chili powder and cinnamon. Season with salt and pepper. Cook for an additional 15 minutes.
~ Add chocolate and stir until melted. Add chicken and heat through.
~ Serve with flour tortillas.

  • This is Gringo style mole! It does not have authentic ingredients for real Mexican mole. Who knows, she made have made a new type of food like they sell at Taco Bell or something like that? To me it doesn't look appetizing. You are better off buying the mole in a jar called "Dona Maria" you just add the chicken broth and may add Mexican chocolate bar if you want it sweeter, at least all the ingredients for mole are already in the mix. Si no saben hacer mole compren "Dona Maria" enfrascado.

  • Found this vid very interesting...thanks for uploading this vid...sometimes is better to use canned products ... it's more practical...and easier..cooking should be a pleasant experience...
