  • For gorgeous eggs without the dark green circle around the yolk and far better textured yolks as well as whites, ...place eggs gently in pan then cover by two inches with cold water. (single file not stacked) Over medium high heat bring to boil, place lid on pan, turn off heat and time for 12 minutes. Drain and place eggs in ice water to stop cooking. The residual heat cooks the eggs perfectly and they melt in your mouth! No need to boil for 15 minutes... This from Cook's Illustrated.
