Yes, we're going to a birthday party vegan-style....

A quick video on what we do to prepare for a birthday party with non-vegans....

And here's the recipe for the muffins!! I got it from "The Joy of Vegan Baking" by Colleen Patrick-Goudreau

Banana Chocolate Chip Muffins w/ an Amirah B Twist :)
Ingredients:
2 c whole wheat pastry flour ( I used whole spelt flour)
1 1/2 tsp baking soda
1/2 tsp salt
1 c sugar
1/3 c canola or vegetable oil (I used EVOO & it came out fine)
4 ripe bananas, mashed
1/4 c water
1 tsp vanilla extract, alcohol-free (I also didn't have any vanilla extract & it still tasted delish!)
1 c nondairy semisweet chocolate chips (I used vegan carob chips)
1 c unsweetened coconut flakes

Preheat oven to 350 degrees. Lightly grease muffin tins. In a medium-sized bowl, mix flour, baking soda, and salt together. In a large bowl, beat the sugar and oil together, then add the mashed bananas. Stir in the water and vanilla and mix thoroughly. Add the flour mixture, along with the chocolate chips and coconut flakes, and stir to mix. Fill each muffin tin halfway with the batter. Bake for 20 to 30 minutes, until they are golden brown and toothpick inserted into the center comes out clean.
