The same Quran also says:

Now the question is: Do Jews believe in Islam? Are they Muslim?
You quoted:
[5:21] "O my people, enter the holy land that GOD has decreed for you, and do not rebel, lest you become losers."
So Jews not only left Islam but rebelled and became losers. They rather conspired to kill their next prophet Jesus and they became enemies to their last Prophet Muhammad (SAW).
Allah never chose people because of any race or ethnicity but because of having Faith in His message, i.e., Islam.
