今年,我們買到又大又香的南高梅,二十公斤的價錢雖然不便宜,但因為梅干是我們夫婦「抗酸化運動」的健康主力,所以還是花了大錢買來自己動手釀。釀梅干要小心不要讓它發霉­,一次釀兩人吃的一年份量就很吃力,因為釀梅干時除了梅干本身的重量,加上珐瑯鍋的重量更加吃力。有興趣的讀者請注意,釀梅干時產生的梅醋因為酸性極強,若用膠質的塑膠桶­,會產生有害的環境荷爾蒙。凡是想要學釀梅干的人,一定要選用玻璃瓶及珐瑯鍋才好。
