Zebras are typically too wild to be trained for riding. It's possible, but no advisable. As for cattle, I doubt that would be a comfortable ride.

This is for someone with a perfectly trained horse. Most horses are not that well behaved!

It's a good vid, and she's precisely correct. However, for most people it takes ages to develop this level of skill. Nevermind the horse, they have school horses if you're looking for calm. Regardless, I'm talking about the rider. Even walking most beginners will flail their legs about, turn their toes out, and cannot separate their hips and torso with the horse movement. It's not this simple (a new rider can't "do this" in a minute). She's quite good.
