Japanese Rice - Recipe Below......
INGREDIENTS
1 cup (250ml) short/medium grain white rice
METHOD
Wash the rice with a rapid hand motion in tap water for 20 seconds.
Discard the cloudy water and repeat the washing with clean water.
Wash the rice at least twice or until the water no longer becomes cloudy.
Soak the rice in clean water for one hour.
Use a heavy saucepan with a lid for the cooking.
Ideally the lid should have steam holes. If not,
the lid should be loose-fitting to allow the steam to escape.
Add 300ml of water to the pot (20 percent more water than the amount of dry rice).
Add the rice to the pot and place on a high heat.
Bring to a boil and leave until the bubbling subsides.
This means that the water is almost gone.
Turn off the heat and without removing the lid, leave to
steam for a further 15 minutes before serving.
Serves 2-3 people as part of a Japanese meal.
