So, how do those throwing moves work against someone they can't lift? Is there some sort of technique to counter the weight issue?

Yes and no. You can compensate some weight difference by proper techniques (e.g. getting your center of mass under the opponent's and lift with your legs power only)

But it's always a good idea to select just a fitting technique for your current opponent. When fighting a real big guy, there might be better throws then lifting him above your head ;-)

Yea i agree,when dealing with a really big guy some wrestling takedowns that can be found in Ju Jutsu are more effective.Unless you are a really big guy yourself :)
