For the Touchscreen thing, try to google for evtouch. I've read in a few topics that it should work with that...
keep on trying, ubuntu is a nice distri to start with and finally become a linux geek ;)

hey guy,
nice videos so far. I'm not a linux expert, but the thing that you're work isn't safed (your customized panel etc.) is because you run it from a live cd / live usb stick. If you don't want to install ubuntu on your harddrive, just install it on the usb drive and boot from that. (possible with grub boot loader)
Then also your changes should work.
