2 large eggs (or 3 small eggs for thicker mayonnaise)
2 cups of oil
1 tbsp vinegar
2 tsp lemon juice
1/2 tsp salt
1/8 tsp dry mustard

Combine mustard, salt, vinegar and lemon juice. Add eggs. Mix eggs with hand mixer while slowly adding oil. Mix until oil is gone and mayo is thick and creamy.

Let stand for 1 hour then refrigerate.

  • Looks wonderful and would be somuch cheaper than store bought. One Q, in the recipe it calls for 2 t. of lemon juice but you used a T. Does the measurement actually matter that much? I do like a tart Mayo.

  • It really depends on your taste. The acid from the vinegar more than makes up for any variance in the amount of lemon juice.
