Step 1: Brew the Coffee

Select your coffee for its roast. An Italian dark roast will suffice. However, in order to stay with tradition, a French roast may be more suitable. Once ground, vital oils in coffee begin to dry. Keeping coffee in whole beans until it's time to use them may increase the flavor of your coffee. Store beans in a cool, air tight place to protect the oils from evaporating or freezing.

Step 2: Scald the Milk

The type of milk which is used will determine how fast it will scald. Take care not to boil milk, bringing it only to a point where tiny bubble begin to form. The higher the fat content of the milk, the more likely it is to boil, while skim milk takes much longer to bubble as do many nut and rice milks with a high water content. Scald the milk in a saucepan in preparation for the final step of the Cafe Au Lait. If you find it difficult to determine when the milk is ready, use a kitchen thermometer to reach 150 to 160ºF.

Step 3: Combination

Making this drink with the coffee on bottom or top is a personal preference. Some believe that coffee will be hotter than milk. Therefore some choose to place the coffee in the bottom, adding it to the mug first. However the authentic way to combine these two classics into a Cafe Au Lait is to pour both the coffee and the milk at the same time, and at the same proportion. Attempt this combination from two feet above the cup, the traditional way, to add a bit of entertainment to your Cafe Au Lait making process.

  • @mbollutchu Actually Cafe Au Lait isn't "Milk Coffee" It's Coffee with milk. Notice how much coffee he has in this video and if you watch the Cafe Latte he has that same amount of coffee in this video as he does milk. Plus he's using Coffee not espresso, which is used in the Cafe Latte.

  • What exactly is the difference between Cafe Au Lait and Cafe Latte? I thought at first they were different but then I found out that Cafe Au Lait is just a milk coffee in French and Cafe Latte is also a milk coffee in Italy. So basically they're just the same beverage with different names (in different countries) right?

    But then this guy has 2 different videos in making Cafe Au Lait and how to make Cafe Latte.
