Yields: 4 servings
Ingredients:
8 oz. pasta, uncooked
1 tbsp. olive oil
3 tsp. minced garlic
1 onion, sliced and separated into rings
1 green pepper, cut into strips
1 tsp. fresh ginger, minced
1 mango, seeded and chopped
2 cups cooked chicken, chopped
¾ cup fat free milk
¼ cup margarine
Salt and pepper to taste
1 tbsp. grated Parmesan cheese
Preparation Directions:
~ Cook pasta according to pkg. instructions, drain and set aside.
~ Heat olive oil in large skillet over medium heat. Cook the garlic, onion and green pepper until tender. Add ginger, mango, and chicken; cook until heated through. Place milk and margarine in microwave safe bowl and heat in microwave until margarine is melted. Gradually add to chicken mixture and cook until slightly thickened.
~ Add cooked pasta to chicken mixture along with salt and pepper. Cook and stir 2 minutes until ingredients are well blended and pasta is hot. Stir in cheese. Serve.
