  • Thanks, Red Shift! Beans should be soft like from the can but with a better texture. Crunchy ones may give you digestive problems. Be especially careful to cook kidney beans enough ... they can be toxic. See details on the basic beans recipe on the Cook for Good website.

  • this seems good, I am soaking up some beans myself. Q: My beans have been soaking all day after using the quick soak method. Now I bit into one of the (kidney) beans and it is a bit crunchy. (like a raw carrot) Is this normal for a dehydrated bean or should they be soft like the ones that come out of a can? I've never done this before so I am not sure what the testure is suppose to be like.

  • This is great. But in order to truly compare dried to canned it would be good to consider the cost of the energy it takes to cook the beans.

    We should all eat more healthfully and dried beans could be a great addition to our diets.

  • Glad to see this video. Wish more people "knew" about the ease, economy and nutrition of beans.

    One pot of pinto-bean chili lasts us all week. Talk about the original fast food, when you're really busy! Add a salad, or some guacamole or a microwaved sweet potato side, and you have some terrific and heart-healthy eating. And CHEAP!

    Thanks for going over the basics. You do important work.

  • I can get about 4 meals (2 dinners + 2 leftover lunches) out of a one pound bag of beans.
