I'm hispanic and we do things so different! If it were us it would look darker, crunchier, juicier in the inside, and we'd keep the seasoning over night.. and yes, you do cover it up for an hour then uncover it for that nice brown look..

why the big pan just for a little chicken breast p/s you could of wrapped the chicken in aluminum foil and let it cook in its own juices and it would of stayed moist and be tastier as well.
