You should always use a thermometer. Any time your oil stays over 350F for an extended period, you can't reuse it. It can also cause flash fires, as seen in this video. Watch the temp and remove it from the heat if it gets too hot. It's better to take a little longer to cook than catch fire.

This is what happens when stupid people try to fry turkeys. I've had them all my life and never even see a flare up. Of course I'm from south lousiana and we practically invented it. A baked turkey isn't half as good as fried. Even the deepest parts of the white meat melt in ur mouth. And if u do it at the right temp like ur supposed too its not even greasy. Crispy outside juicy tender inside. And u always gotta inject the cajun butter overnight. Ohhh ce cest bon!!

@rapinbatches yo shithead .....this was a planned fireball w/ mechanical releases and plenty of safety measures standing by....get off your Louisiana soap box....we know how to fry a turkey correctly!!! The point wasn't to do it the right way but in a way to create a huge fireball!! It was a party
