These are Gewurztraminer grapes frozen being "pressed off" . We harvest these grapes cold during the hours of 2-5 AM. The whole clusters are then rushed to a freezer where they sit for at least 20 days (not 18!!!). We then bring them to the crushpad early and process them as if we were in Ice Wine regions. As we press the frozen grapes, the pure sugar begins to thaw while pure water stays frozen in the press basket. Remember as a kid, you'd suck the sugar out of the snow cone (sugar drops to bottom of cone) leaving the pure ice still in frozen form. We then begin fermentation on the tiny amount of juice.
