For the first time in my life, I used egg powder today as circumstances forced me into finding an egg product that didn't need refrigeration. I made a scramble. 1.5 cup of boiling H2O, 1/2 cup bacon bits, 1 cup of deyhdrated vegetables (premix). Simmer for about 15 minutes, then add salt, pepper, the powdered egg mixture and a tbls parmesean cheese. It was awesome! The eggs held flavor well and didn't taste powdery at all. They didn't really clump like regular scrambled eggs. Still good tho!

For at home - mix the night before and leave in the refrigerator and the taste is very similar to real eggs, especially for omelets.
some powder eggs if not all, have 900 parts per million of sodium fluoride in them, odd i thought and to make it even more interesting this is even more then tooth paste has and Crest toothpaste warns of not swallowing the paste and if you do Crest recommends calling poison control for help.

yes, I have made them. You want to cok them in a non-stick pan and use no oil. Then dry them very dry in the dehydrator. The major difference between storebought and those done at home is the home done ones turn a little brown instead of staying so yellow. Other than that, they work exactly the same.

All egg powders are the same. It's a 1:2 ratio. Why some say 1 tbsp powder to 2 tbsp water is because that is for a medium egg. a large egg is 2 tbsp powder to 4 tbsp water. and ex-lg egg is 3 tbsp powder to 9 tbsp of water. So you can scale how big of an egg you want. :) you can make your own egg powder too, by dehydrating eggs (safely at 145 F degrees). Just cook scrambled eggs, put in dehydrator and then in blender when dry to powder.
