Mangoes, avocado, caramelized shallot, heirloom tomatoes & orange sections are mixed with a dressing of olive oil, balsamic vinegar, Dijon mustard, and orange juice. Place on a bed of red lettuce, bib lettuce & olive leaves - add freshly grilled wild salmon & drizzle a bit more dressing, then serve.
