Jojeh Kabab ba Sose Sabzijat
Chicken Broth ............ 1 Cup
Onion .............. 100 gr
Carrot, Celery ............ 50 gr
Salt and Pepper ....... As Needed
parsley, Green Pepper ..... 50 gr
Oil .................. 3 tsp
Garlic ........... 3 dove
Tomato Paste ......... 1 tbsp
Corinder Powder ...... 1 tsp
Whole Chicken ....1

جوجه کباب با سس سبزیجات

براث مرغ............ ۱ فنجان
پیاز.............. ۱۰۰ گرم
هویج ، کرفس............۵۰ گرم
نمک و فلفل....... در صورت نیاز
جعفری، فلفل سبز..... ۵۰ گرم
نفت.................. ۳ قاشق چایخوری
سیر........... 3 عدد
رب گوجه فرنگی......... ۱ قاشق غذاخوری
پودر گشنیز ...... ۱ قاشق چایخوری
تعداد مرغ.... ۱ عدد
با مواد فوق سس را تهیه کنید و در اواسط پخت با برس مخصوص غذا دو مرحله روی کباب ها بزنید.

طرزتهيه:


ابتدا جوجه و يا مرغ را پاك كرده و پوست آنها را بر داريد و به قطعات كوچك تقسيم كنيد.سپس در كاسه تقريباً بزرگي آبليمو، روغن زيتون يا روغن مايع ، زعفران سائيده آب كرده ، نمك و فلفل ، فلفل دلمه اي خرد شده و پياز خرد شده را را مخلوط كنيد و قطعات مرغ را در اين سس قرار دهيد و مخلوط كنيد. بگذاريد چند ساعتي در حالي كه روي ظرف كيسه محافظ كشيده ايد، در يخچال بماند. بعد آن را به سيخ كشيده و روي آتش ملايم كباب كنيد. در صورت تمايل سيخ هاي كباب را در فر اجاق قرار دهيد و در حرارت 350 درجه مدت 25-20 دقيقه كباب كنيد.

The Chelo (Chelow چلو کباب) kebab is the national dish of Iran. Served on skewers over a bed of rice, this recipe is basic, yet full of flavor. I prefer to grill this over a charcoal grill than over a gas grill because the flavor is much better. If you do not have a grill, use the broiler in your oven.
Ingredients: 1 lb. ground beef or lamb 1 teaspoon cumin 1/4 teaspoon black pepper 1 large onion, chopped

Preparation:
In a mixing bowl, combine all ingredients. Combine well using wooden spoon, or with your hands. Mixing with your hands allows the mixture to combine better.

Take about 1/4 meat mixture and make into a ball. Place ball through flat skewers, and shape into square cigar-like shapes. Repeat with remaining meat.

Place on grill and cook about 4-6 minutes each side, until meat is no longer pink and is done.

Serve over a bed of white rice and pita bread. Serve with a salad, like a fattoush or tabbouleh.

Serves 8.
Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes
Ingredients: 2 lbs beef sirloin or tenderloin, cut into 1 inch cubes 1/2 cup olive oil 1 tablespoon white vinegar 1 teaspoon cumin 1/2 teaspoon coriander 1/2 teaspoon paprika 1 teaspoon garlic, minced

Preparation:
24 hours prior to grilling, prepare marinade by combining olive oil, vinegar, corinader, garlic, cumin, and paprika. Pour marinade into freezer bag and add beef cubes. Allow to marinate in the refrigerator until ready to grill.

Remove from refrigerator and thread meat onto skewers that have been sprayed with cooking oil.

Spray grill with cooking oil to prevent sticking. Grill for 5-7 minutes on each side or until desired doneness.

Serve over a bed of white rice, salad, and pita bread.
