They appear to be using two types of coupler in New Zealand: the old "meat chopper" type and the AAR type. Do they maintain separate classes of wagon equipped with one or the other or do they use an adaptor?

Yes they use an adapter between the two. As far as I know, they will all eventually be changed over to the American style coupler to increase the loads that can be hauled. Cheers
