【材料】:螺肉 300g、小黃瓜 300g 、薑 20g 、辣椒3根、葱2根、蒜頭2瓣、醬油3大匙、紹興酒2大匙、糖1大匙、太白粉1大匙、香油1小匙
【做法】:
1、水煮滾後放入螺肉下去川燙後,接著再放入冷水中稍稍浸泡後,再把冷水倒出 接著再倒入冷水、同樣地再把水倒出洗淨備用。
2、將小黃瓜切成四等份備用。
3、蔥白切段、蔥絲切段、辣椒切段、薑切絲、蒜切末後備用。
4、起鍋熱油先放入蒜頭、薑下去爆香。接著再放入辣椒、蔥白、此時轉大火;再放入紹興酒嗆鍋。
5、嗆完鍋後再加、醬油、糖調味、等到湯汁呈焦糖色後再加入少許水,轉小火再芶個薄芡。
6、接著放入螺肉下去拌炒約兩分鐘後,再放入小黃瓜、蔥綠段、趁小黃瓜尚未煮出水前,再加淋上少許香油,拌炒即完起鍋。

  • 台湾师傅做川味就跟四川师傅做台味一样,舌头没有长年的熏陶,做­不出那感觉的。
