It must be a southern thing to not eat the peelings. It's probably against your core beliefs to not eat the peelings, but for heavens sake try it. Less waste and in my opinion a better tasting mashed potatoes to have the skin on.

That's a hell of a lot of clean up just to avoid mashing some potatoes. It's great for tomatoes and applesauce though.
