Ray baking soda, ashes, baking powder, etc ARE leavening. So, you are not making an unleavened bread. You are making a quick bread. Flour and water and a bit of grease made into a soft dough and made into a thin round and baked on a hot stone or griddle or fried in a bit of hot grease is an unleavened bread. Such as a tortilla or the original native american breads. Leaven means to rise the bread. Not just yeast.
