Filmed in Brooklyn, this shows the process of handmade bagels. From creating the dough to the baking and sale, the process is explained along with the extemporaneous commentary on the changing nature of the bagel business, and the shops place in the neighborhood. Filmed in 1979? by Nick Manning, this is part of the 16mm film collection at the Brooklyn Public Library's local history division, the Brooklyn Collection.

I'm a Philadelphia transplant teaching English in the western part of China (Xinjiang), where the local people make a traditional bread called girde nan that is almost identical to the bagel. It's so funny to me that most people here have no idea what a bagel is, while no one back home knows what girde nan is, even though we're all eating the same thing! I can't wait to show this video to my students.

Yes! LOL. you might think it sounds funny but it's true! NY has one of the best drinking water in the states. It reacts differently with the dough. No joke, look it up. Get a bagel from Cali, Colorado, and NY. There is a difference in taste even if they are all made the same.
