Alright, so after you defeat Griever, Ultimecia junctions herself to Griever. This form has almost twice as much HP as the first Griever.
Cast Meltdown, and attack away. Also cast Thundaga, since they are weak to it. One thing to be cautious about is the Helixes that appear beside Griever. Once two have appeared, she will be able to use Ultima, and Great Attractor. Great Attractor deals pretty good amounts of damage, and ignores Vitality, so casting Protect will help that.
When a certain amount of HP has been lost, the bottom half of her will break off, leaving the top half. She can now cast Ultima, Quake, ect. at her own will, even though the Helixes are gone. Griever doesn't have much Vitality in this battle, even without Meltdown, so it shouldn't last too long.

I don't know... I decided to stop using so many triple casts. Mainly because it makes FFVIII too easy for me. :P
