New York Cheesecake (Mt Eden Frasers Café inspired)

This is a 6" cheesecake.

When I went back to New Zealand for my graduation, I had my favourite cheesecake on the last night I stayed in New Zealand before my flight back to Hong Kong on the next day. I always liked to go to Frasers Café in Mt Eden because the desserts there are very very nice and they always open till late (11ish).

1) Don't forget to soften the cream cheese or you will have a lumpy cheesecake.
2) I was whisking or beating on low speed.
3) It is common that the cheesecake rises than falls again.
4) Cool completely on rack before refrigerating. Refrigerating overnight is the best. This gives the cheesecake to become firm.
5) When you remove the cheesecake from the oven, the centre might still be a bit "wobbly", this is normal!! The remaining heat will cook the centre. Don't worry!! Check out the "jiggly test" on the internet for more information.
6) I baked them in the middle rack of the oven.

  • Man thank you so much but I don't have that kind if cheese so can I use plain white cheese and can I use a blender or use my hands and can I use normal 4 white eggs. And I only have crane sugar will that work. And how can I tell if the butter is unsalted
