How do you cook them in the microwave? Do they work well straight to the oven?

You can do straight from freezer to microwave or oven. Just make sure the packaging is safe for either way you choose.

Do you think you could make a video on the kinds of thing that you can freeze? Ive never made meals and frozen them, however Id really like to start. I have a 6 yr old little girl, a set of 2 yr old twins (boys), and a husband who I promise can eat more than all of us put together, lol. I have no clue what you can and cannot freeze. Also I dont really know what to put them in. Completely clueless in this area. Have a huge freezer in my garage with absolutely nothing in it :(

Yes, it depends on the sauce. I use chile sauce and that freezes fine. If cream sauce, I would freeze the enchiladas without saucing them. Add the sauce right before you bake.

I address this extensively on my blog. However, youtube won't let me leave a link here. So, you can go to lifeasmom and look for Freezer cooking in the archived posts in the sidebar

I started doing this with the smallest top freezer known to man. It was one step up from a dorm fridge. We still were able to squeeze about 40 meals in there if they were in plastic bags. But, we didn't have an ice maker. That could make a difference.
