In the next Mario Kart game, Nintendo should have a cup called the Rainbow Road cup with all the past rainbow roads in it...I think that'd be a cool stroll down memory lane.

I think you're talking about "R-tech" (or in this case "L-tech")!? It's basically pressing R continously in a specific rhythm to make the kart slide inside again and again and again. I actually slide using R and press L all the time while drifting through the spiral (which is called L-tech by players).
