  • @riceygirl In many states sushi chefs are exempt from using gloves. Strict regulations are followed in regards to hand washing. The chefs are constantly rinsing their hands in vinegar. Believe me. There is nothing unclean about using your hands. That's just how it's done in sushi restaurants.
