Pickles are high in concentration of Na and Cl due to osmosis when they are made. The water is removed but the salt ions remain and eventually get concentrated. Thus enabling the electrons to easily move through the same way as it would through a salty water = lights up

For a second I thought you were using some kind of transformer.
So, how much current does a pickle draw?
Is it a resistive kind of element?

i'm not sure how much it draws. my brother-in-law may know. i think it's the salt/vinegar mixture in the pickle that gets lit up.
