Playing rolls is fine; and, roll-generated music IS original!
The music generated from Due-Art rolls with encoded expression IS much more realistic than that generated from non-expressed Duo-Art rolls (such as this organ has).
But, in my view, music which rolls generate cannot possibly be as complex and nuanced (and, to my ear, agreeable) as that generated from carefully arranged MIDI files.
