Super Easy Bread!

6 1/2 Cups Unsifted, Unbleached All-Purpose Flour

(You can substitute 1 Cup Whole Wheat Flour, or substitute 1/2 Cup Rye Flour + 1/2 Cup Whole Wheat Flour, for the equivalent amount of white flour)

3 Cups Lukewarm Water (80-100*F)

1TBSP + 1 1/2 Tsp Active Dry Yeast

1TBSP Coarse Salt (Do NOT use regular table salt, needs to be coarse ground, or it will be way too salty!)

Mix water, yeast & salt. Add flour & mix JUST UNTIL combined & flour is thoroughly moistened, no dry spots! Do NOT knead, do not over-mix!

Let sit so dough can rise, about 2 hours, at room temperature.

Place dough in fridge for at least 3 hours prior to use for best results

Cut off grapefruit sized chunk of dough & work into a smooth ball, adding tiny bits of flour as needed. Do not over-knead. Just form quickly into a ball!

Place on pizza peel that is covered in thin layer of corn meal.

Let sit at room temp for 40 minutes.

Pre-heat oven for 20 minutes at 450*F.

Bake loaf on center rack on a baking stone with a steam bath for 20-30 minutes or until done.
Use a metal cookie sheet or baking pan with 1 cup hot water added for steam bath.

Raw dough will last up to 2 weeks in fridge. Will begin to take on a sour-dough type flavor the older it gets. Yummy!

  • So, I made this last night to go with our dinner and it was DELICIOUS! I ended up putting old fashioned oats on the tops of my loafs (I made 3 small ones) My husband enjoyed it so much he called my mother-in-law to brag to her that he got to eat homemade bread with his dinner... lol!

  • Looks super easy :D I work at Panera Bread so I don't know if I'll ever make it since I'm always bread-ed out. BUT maybe someday I'll be in the mood for some hot, tasty bread. OH by the way, my Panera training instills me to want to let you know it's pronounced Art-i-sen bread. Because, you know, everyone is going to care about your pronunciation of bread ;] Love all your videos! The cooking ones especially!! MUCHO AMORE!
