  • これは血抜きと言って生きているうちに血を抜き魚の身が血なまぐ­さくならないようにする処理なのです。この処理をすると寿司でも­刺身でも美味しく食べられます。しないと鮮度が落ちるし生臭いし­で食べれたものではありません。外国の皆さんの調理法には魚を活­〆する方法は一般的ではないのですか?
