Actually, the real reason was, since the people at Nintendo were debating over coloring him yellow or pink (he turned out pink in the end), they couldn't decide on the color by the time the game was supposed to come out, so they made him white for that game only.
Personally, I think yellow looks better on Kirby, but that's just my opinion.

Nice! It's kinda weird how they made Kirby colorless in the first game... I know the Gameboy was colorless, but, they apparently made up color schemes for all the other characters!
