Interesting to see it done this way, but using the Collins foot, I could have coped the whole profile in about the time it took you to do your relief cuts. (just finished putting up 600' of a similar 5-1/4" profile). I can see where a sander/grinder might have an edge on a profile with multiple tight radius beads, but you can't beat the Collins foot for coves and ogees.
Curious about your miter jig - are the stops adjustable for different moulding sizes, or are they fixed?

I can cope that by hand with a coping saw in under 10 seconds with 4 cuts

will a normal orbital sander do the same job?

An orbital sander will not. Many people use a rotary sander - i.e. a disk grinder to cope crown. The difference is dust collection. Dust collection is not common on disk sanders. The RAS 115 also has variable speed which is also uncommon on disk sanders.
