It looks like a green tea of some sort which you wouldnt brew for very long. But she does sort of by rinsing the tea first, which is all a delicate tea needs to awaken it. She is using glass too which would also show it is a green or maybe even a white tea so that the tea does not overheat, cause the glass loses heat quickly.

I know this is a nice ceremony and performance but if you travel to Asia beware of tea ceremony scams, I got charged $100 on my credit card in Shanghai.
REPORT IT AT SCAMSPOTTERSDOTCOM Probably the scam occurs more in China than Japan.
