i'm sailing hc16 since >25 years now - still with the original boat - done this several times, not a big problem with 2 waterskies if the skier is not too heavy. never was able to start a mono-skies though!! good fun, on reach/running courses you can even outrun small motorboats!
Most of what I have seen is the hobie sails over the waiting skiier and drops the line to them. One of the easiest ways to get the skiier up, but requires a lot from the sailors. One of the many things that can only be done with a multiple-hull sailboat.
Theres more than enough power to pull a skier on a beam reach...the problem is the start. Maybe they are using shock cord and getting up to full speed.

25 years ago in Fleet 23 DFW we had a guy with an 18' Hobie pulled a water skier regularly...20 plus Knots of breeze

Well, I've been meaning to try it again.
The last time I tried - the kayak had a person in it that didnt know what he was doing, plus there was hardly any wind at all.
I thought it might be a cool way to carry food and camping gear on a long multi-day trip along Matagora Island in the Texas gulf coast.
Geez - I guess I'd have to carry those big ugley wheel things to get it up off the beach because of the tides.
