I love, love pizza, I moved from eastern Pennsylvania to Oklahoma and what did I find??? A bunch of "pizza shops" that cant make pizza...I'm on a quest to create a real NY pizza. And I don't have a cleaning cycle either.

This almost ruined pizza for me. Chain pizza ruins itself, but the county I live in has a trillion pizza places and even though they have New Yorkers and professional bakers and are hidden hole-in-the-wall places, they all seem like they are going by a stock Betty Crocker recipe, like the charm is supposed to be that it's fresh.

I made a halfway version of this at my house and it's the best pizza I've had for maybe 12 years.

I've been in awe of you and your website for a while now. You truly are a pizza scientist, artist and historian.

I am aiming to create authentic N.Y style Pizza here in London.

Do you still rate Johnny's in Mount Vernon, N.Y as the best? I'll have to come to N.Y and go on a Pizza tour one day!!!

Mr Varasano, thank you so much for your very instructive site! It has improved the quality of my home pizzas 100 %! I wish I knew how to get a proper yeast culture to "start" the dough here in Brazil though.
