I haven't had much success with using pate brisee or pate sucree in pies. The flavor, texture, and richness is there, but fluted edges and cut-out decorations don't hold their shape as well. Might be due to the higher water content of butter vs. shortening. Your pie looks simply delicious, I do appreciate you sharing your recipe! :D
