@TheFloyd047 - Heston's bolognese is not traditional (I've eaten it) - like most of his food, it is more interesting than it is delicious. That's the nature of this sort of modern inventive approach. Think of it like Paris high fashion - largely just art for the sake of art. But adding a little fennel in with the onions for the ragu (similar flavor to the star anise) can be very nice - and this IS traditional Italian cuisine in some regions.
@lexichronicle2 No, some Pasta variaties are more golden due to the use of more egg yolk. The color is a result of how much white and how much yolk are used to make for the egg part of the pasta.
@TheFloyd047 ok if you can still taste it then dont do it. I tend only to find it ruined if i can bite onto a piece of star anise thats horrible. if it's powdered i find it ok. Mind you, you can try fivespice powder instead. i find it works quite well
@iamnobodyism What difference would that make? I would still be able to taste the star anise in the bolognaise, which, in my opinion, ruins it slightly.
I've watched a lot of cooking/food videos, but these videos have made me crave Bolognese more than I have ever craved any food, ever!
